So ! It’s final day of the @thegfw Instagram challenge and the theme is ‘underneath’. Underneath every mountain of perfectly chargrilled pork chops, is a pile of the best freshly fried, golden chips. At ‘Telis’ chop shop in Athens, this is basically the only dish on the menu. Day 25 of the @thegfw Instachallenge and the theme is ‘Hero’. That’s a tricky one for me, as there are SO many. After a lot of thought, I think my real heroes are the amazing people, like the lovely Kontessa Drosou, of @tavernaperasmakos Kos. She cooks for the family taverna every day - the menu changes with the seasons and her cooking is spot on. Because she’s not busy enough, she makes baklava for local weddings. A real Kos speciality is a ‘spoon sweet’ made from plum tomatoes - obviously Kontessa makes her own. Oh - I forgot to mention- they grow there own vegetables and fruit. The olive oil is there’s too.
