The subtitle to this blog is ‘Greek recipes from an English Kitchen’ – one reason,obviously, is that I am at the moment located in the U.K.  However, another reason for this subtitle is because it is not always easy to replicate dishes from the Mediterranean, or indeed other places, without a little adaptation. Over the years I have discovered one or two things that make cooking Greek-style a little easier and also help to achieve authentic results. I hope these hints proves useful.
